Breakfast Eggs and Chickpea Lettuce Salad - Healthy Foodie - ILYNSI Yoga

They say breakfast is the most important meal of the day. What better way to start your day than with a delicious omelet and nutritious salad. Try this savory and protein packed meal today that will keep you satisfied well into the lunch hour. 

Materials: Skillet, knife, cutting board, bowl, whisk, egg rings, salad spinner

Ingredients:

  • Omelet
    • 2 eggs
    • Shitake mushrooms
    • Salt and pepper
    • Olive oil
    • Red pepper flakes
  • Chickpea Salad
    • Romaine lettuce
    • Salt and pepper
    • 1 can of chickpeas
    • Red wine vinegar
    • Olive oil
    • 1/4 cup Feta cheese
    • 1/4 red onion
    • 1/4 white onion 
    • 2 tblspns Za'atar

Preparation:

  • Place skillet on stove over medium heat
  • Crack 2 eggs in a bowl and whisk them together
  • Chop shitake mushrooms and white onions 
  • Soak lettuce in salt water for 5 minutes to clean out dirt or bugs, then rinse
  • Open, drain, and rinse can of chickpeas
  • Slice 1/4 red onion

Instructions:

  • Omelet
    • Place egg rings onto skillet and add 1 tblspn olive oil within each ring
    • Add chopped shitake and onions and let cook for a few minutes
    • Pour whisked egg over cooked shitake and onions 
    • Let cook for 3-5 minutes
  • Chickpea Lettuce Salad
    • Chop up romaine lettuce and place in salad spinner to dry and our out excess water
    • Add sliced red onion
    • Add chickpeas
    • Add za'atar
    • Add feta cheese
    • Add olive oil  
    • Add salt and pepper
    • Mix together
