Caramelized Potatoes and Onions

Caramelized potatoes and onions - Healthy Foodie - ILYNSI Yoga

Caramelized potatoes and onions was one of my experimental dishes that turned out fabulous! Not to toot my own horn but this one is definitely one for the books. Potatoes are such a versatile vegetable that can be used as a snack, side dish, or even a main dish. Try out this delicious recipe today!

Materials: Sauce pan, knife, cutting board, potato peeler

Ingredients:

  • 4 large potatoes
  • 1/2 white onion 
  • 2 stalks of scallions
  • 1/4 cup labaneh
  • 1 tblspn salt and pepper
  • 1/4 cup water
  • 2 tblspns olive oil

Preparation:

  • Peel and wash potatoes
  • Cut into medium sized cubes
  • Place sauce pan onto stove over medium heat
  • Chop onions
  • Chop scallions

Instructions:

  • Add 2 tblspns olive oil into sauce pan over heat
  • Add chopped onions and let cook until golden
  • Add cubed potatoes and let cook 
  • Add salt and pepper 
  • Mix well so that potatoes rotate fully in saucepan
  • Add 1/4 cup of water and cover with lid so that potatoes can steam cook 
  • Allow to cook for 5-10 minutes before checking on them
  • Once they are golden and soft, and the water has evaporated you can turn the stove off and let the steam continue to cook the potatoes for another 5-10 minutes 
  • Once ready, place potatoes onto a plate
  • Top with labaneh (optional) and scallions
