Plant Based Lettuce Taco's

If you are looking for a low carb, vegan, and gluten free meal then you have to try this healthy and delicious lettuce taco recipe. Packed with an abundance of cohesive flavors and colors you will love it from the first bite to the last. 

Materials: Knife, cutting board, sauce pan, skillet, salad bowl

Ingredients:

  • Lettuce
  • 1 cup of rice
  • 2 cups of water
  • 1 tblspn olive oil
  • 1 tspn salt
  • 1 tspn pepper
  • 1 tspn ground turmeric
  • 1 tblspn ground cumin
  • Pinch of red pepper flakes
  • 2 cloves of chopped garlic
  • 1/4 cup chopped onion
  • 1 small zucchini
  • 1 cup of red and yellow peppers
  • 1 can of black beans
  • 2 leaves of chopped cilantro

Preparation:

  • Wash the lettuce in warm water
  • Boil 2 cups of water in a pot and add a pinch of salt
  • Chop onions
  • Chop garlic
  • Slice zucchini
  • Thinly slice red and yellow peppers
  • Open and wash a can of black beans

Instructions:

  • Boil 1 cup of rice in 2 cups of water
  • Add oil to skillet on medium heat
  • Add chopped garlic and onions until golden
  • Add sliced peppers
  • Add sliced zucchini
  • Sautee until tender
  • Add black beans and cook for another 10 minutes. 
  • Once the vegetables and beans are ready, transfer to a plate
  • Once the rice is ready, transfer it to the skillet and roast the cooked rice
  • Add cumin 
  • Cook the rice on the skillet until the rice is golden, this helps to absorb the flavors from the vegetables and add an additional crunch to the rice. 
  • Once all the ingredients are cooked, create your lettuce taco starting with the rice, then add the vegetables and beans
  • Garnish with chopped cilantro
