Roasted Eggplant Salad

Roasted Eggplant salad - Healthy Foodie - ILYNSI Yoga

Eggplant is such a versatile vegetable and a stable in my kitchen. One of my favorite ways to eat eggplant is to roast it and turn it into a delicious spread. 

Materials: Aluminum foil, bowl, mashing fork, knife

    Ingredients: Small eggplant, baby peppers, vinegar, salt, pepper, 3 cloves of garlic, dill

    Preparation:

    • Wrap eggplant 
    • Dice garlic
    • Chop baby peppers into small cubes
    • Chop dill

    Instructions: 

    • Place eggplant on an open fire on the stove or grill
    • Once roasted and soft on the inside, take off the fire and place into a bowl
    • Peel skin off eggplant with a fork
    • Mash eggplant 
    • Add garlic
    • Add salt and pepper
    • Add vinegar
    • Add dill 
    • Mix well
