Sautéed Green Beans and Shitake Mushrooms Over Rice Noodles

Green beans and shitake are such a wonderful combination. This is such easy dish to make and best of all it is low carb and extremely filling. It’s an amazing dish that will have your guests asking for seconds or maybe even thirds so make sure to make enough!

Materials: Cutting board, stove, large skillet, knife, large bowl, tongs

Ingredients:

  • 2 cup of green beans
  • 1/4 cup of peanuts
  • 1 cup of shitake mushrooms
  • 1 head of garlic
  • 1/4 cup of onions
  • 1 tblspn olive oil
  • 1 tspn salt and pepper
  • Pinch of red pepper flakes,
  • 1 bunch of rice noodles,
  • 1 cup shitake mushrooms

Add this second set of ingredients after the top set in the picture above.

Preparation:

  • Prewash green beans and shitake mushrooms
  • Dice garlic into small pieces
  • Chop onions
  • Chop shitake mushrooms
  • Dice peanuts (¼ cup) - omit if allergic or prefer another type of nut

Instructions:  

  • Preheat large skillet on medium heat
  • Drizzle 2 tbspns of olive oil
  • Add only half of the diced garlic, 1/4 cup of onions, and let cook (2-3 min or until golden)
  • Add mixed greens and mix around with tongs until greens have come down (2-3 min)
  • Add 1 tspn of salt and pepper
  • Add a pinch of red flakes
  • Remove from skillet and add to serving bowl
  • Top with chopped peanuts
