Sautéed Okra and Farro

Not sure how to cook okra? Okra has a very interesting texture and that's one of the things I love about it. For some, it might be too soft and feel strange but pairing it with an texture with the right seasoning it can really be a flavorful experience. Try out my recipe below and let me know what you think! 

Materials: Knife, cutting board, skillet, saucepan 

Ingredients

  • 2 Cloves of garlic 
  • 1/4 of onion 
  • 1 tblspn of olive oil
  • 1 tblspn turmeric
  • 1 tspn salt and pepper
  • 1 pinch of red pepper flakes 
  • 2 cups of okra 
  • 2 cups of Oyster mushrooms 
  • 1 cup of farro 
  • 2 cups water 
  • 1 tblspn ground cumin
  • 1 tspn of sesame seeds
  • 1 stalk of scallions for garnish

Preparation

  • Boil 2 cups of water in a pot on medium heat and add a pinch of salt into the water
  • Chop 2 cups of okra
  • Chop 2 cloves of garlic
  • Chop 1/4 onions
  • Chop 2 cups of oyster mushrooms
  • Chop 1 stalk of scallions
  • Heat skillet on medium heat on the stove

Instructions:

  • Boil 1 cup of farro in 2 cups of water for 10 minutes until you see bubbles in the farro then turn down to low heat and cover with a lead to steam cook
  • While boiling, add 1 tblspn of cumin
  • Add 1 tblspn of olive oil to skillet over medium heat
  • Add chopped garlic and onions to the skillet
  • Add turmeric, salt and pepper and sauté until golden
  • Add oyster mushrooms and okra and sauté until soft
  • Once cooked, add 1/2 cup of farro to a plate and 1/2 cup of sautéed vegetables over it 
  • Garnish with chopped scallions and sesame seeds
