Sautéed Veggies Quinoa Bowl

 

Suateed Veggies Quinoa Bowl - Healthy Foodie - Vegetarian Recipes - ILYNSI Yoga

This is an amazing combination of flavors that will have you licking your plate. Filled with healthy fats, proteins, and carbs, you definitely won't feel guilty eating this. Try out this recipe by following the instructions below. You won't regret it! 

Materials: Knife, cutting board, skillet, sauce pan, plate

Ingredients:

  • 1 cup of quinoa
  • 2 cups water
  • 1/2 cup thinly sliced zucchini
  • 1/4 cup chopped onions
  • 1 clove of chopped garlic
  • 1/4 cup chopped peppers
  • 1/2 tspn cumin
  • 1/2 tspn salt
  • 1/2 tspn pepper
  • 1/2 tspn turmeric
  • 1 egg
  • 1/2 avocado
  • 2 tbspn olive oil
  • Scallions for garnish
  • Red pepper flakes pinch

Preparation:

  • Boil 2 cups of water
  • Thinly slice zucchini
  • Chop onions
  • Dice garlic
  • Chop scallions
  • Cut avocado in half and slice 

Instructions

  • Boil quinoa in hot water for 10 minutes
  • Add 1 tbspn of oil to skillet
  • Add garlic
  • Add onions
  • Add zucchini
  • Add chopped peppers
  • Add turmeric, cumin, salt, and pepper
  • Sautee until vegetables are tender
  • Once vegetables are ready transfer to a plate
  • Once quinoa is ready, transfer to the hot skillet and let it roast for 10 minutes
  • Add cumin to quinoa for additional flavor
  • Once quinoa is ready, transfer to a bowl
  • Add 1 tablespn of oil to skillet 
  • Fry 1 egg 
  • Top quinoa bowl with sauteed vegetables, egg, and avocado 
  • Garnish with scallions
