Lentil and Split Pea Soup

I am a huge fan of soups and this recipe for lentil and split pea is one of my favorites. Below is my recipe for a savory and satisfying split pea soup that will have you licking the bowl and pouring seconds. 

Materials: Skillet, large pot, stirrer, cutting board, knife

Ingredients: Mixed split peas, lentils, olive oil, ½ onion, 2 cloves of garlic, salt, pepper, 3 cups of water, ½ lemon, cayenne pepper, scallions, turmeric, fresh ginger

      Preparation:

      • Boil 3 cups of water
      • Dice ½ onion
      • Dice 2 cloves of garlic
      • Chop scallions
      • Chop fresh ginger

      Spices:

      Instructions:  

      • Add 1 tspn of salt to boiling water
      • Add 1½ cups of mixed split peas and lentils to boiling water and let boil for 20 min
      • Lower heat until water comes to a simmer
      • Separately, in the skillet add 2 tbspns of olive oil on medium heat
      • Add chopped onions, ginger, and diced garlic
      • Add a pinch of salt, pepper, turmeric, and cayenne pepper
      • Sauté for 3 min
      • Once split peas have finished boiling, add sautéed mix to soup
      • Serve in a soup bowl and squeeze ¼ of lemon on top
      • Top with chopped scallions
      • Optional: Labne or Greek yogurt
