Vegetarian Sushi Hand Rolls

A wonderful and highly versatile plant-based alternative to sushi hand rolls. High in nutritional value and most importantly delicious. You might even wonder if three rolls are enough!

Materials: Knife, cutting board, measuring cup, sauce pan, skillet, wooden spoon

Ingredients:

  • 1 cup of rice
  • 2 cups of water
  • 1 small zucchini 
  • 2 baby peppers
  • 1/4 red onion
  • Roasted nori 
  • Pinch of salt and pepper
  • 1/4 cup Soy sauce
  • Ginger
  • Wasabi
  • 2 tblspns olive oil
  • Vinegar
  • 1/2 avocado

Preparation:

  • Boil 2 cups of water in a sauce pan
  • Slice zucchini the long way
  • Slice baby peppers the long way
  • Slice red onion the long way
  • Slice avocado

Instructions:

  • Add rice to boiling water and boil until you notice air holes in the rice, then cover the pot with a lid and let the rice steam 
  • Add a splash of vinegar 
  • Add olive oil to skillet over the flame on the stove
  • Sauté the zucchini and peppers until tender
  • Add a splash of water to the skillet to increase steam and speed up cooking
  • Add salt and pepper
  • Add soy sauce
  • Once the ingredients are ready, place a sheet of nori on the clean cutting board and begin adding a spoonful of rice on top of the nori
  • Add cooked vegetables
  • Add raw red onion 
  • Add sliced avocado 
  • Roll nori into a  hand roll, gently dampen the sides of the nori sheet to help with folding around the edges
