Whitefish Buckwheat and Bean Sauté

On a pescatarian diet, whitefish is practically a staple food item. It's light, cooks really quickly, and can be seasoned in so many different ways. Buckwheat is another great grain to add to your pantry especially if you would like to take a break from quinoa from time to time. Its The best part about it is that it is gluten-free. Beans are also a great addition to any meal because they can be flavored any way you like it and are packed with healthy carbohydrates and proteins. 

Materials: Cutting board, knife, sauce pan, skillet, baking pan

Ingredients:

  • 1 pack of white fish fillets
  • Salt and pepper
  • 1 tblspn herb seasoning 
  • 2 tblspns olive oil
  • 1 can of greenbeans
  • 1 can of kidney beans
  • 1/4 white onion
  • 2 cups of water 
  • 1 cup of buckwheat
  • 1 scallion stalk 
  • 1 lemon wedge per serving

Preparation:

  • Preheat oven to 375 degrees Fahrenheit 
  • Defrost and wash fish 
  • Boil 2 cups of water in a sauce pan over medium heat 
  • Open, drain, and rinse can of greenbeans
  • Open, drain, and rinse can of kidney beans
  • Chop onions

Instructions:

  • Whitefish Fillet
    • Add 2 tblspns olive to baking pan 
    • Add white fish fillets into baking pan 
    • Add herb seasoning 
    • Add a pinch of salt and pepper
    • Place in oven for 15 minutes
  • Buckwheat
    • Add buckwheat to boiling water and let cook for 10-15 minutes
    • Add a pinch of salt
    • Once you start noticing air holes in the buckwheat turn fire to low heat and let steam cook for another 5 minutes 
    • Once ready, remove from stove 
  • Sautéed Beans
    • Place skillet onto stove over medium heat 
    • Add 1 tblspn olive oil 
    • Add chopped onions
    • Add greenbeans and kidney beans 
    • Add salt and pepper 
    • Sauté for 5 minutes until caramelized 
  • Once all items are ready, place onto a plate and top with chopped scallions
  • Squeeze lemon juice for additional flavor
